You might want to add to your fstab mount options:

   commit=xxx

where xxx = seconds for syncing to disk. By default it is 5 seconds, but on a highly available machine like a PBX, you should be on a UPS, so this can be extended out to 300 seconds or so. I have mine set to 120 seconds.
